Sundown and Supper:
The Sousi's Bagels Edition

For the final edition of “Sundown & Supper”, a Ramadan 25 exclusive editorial of recipes, in collaboration with some of our favorite local chefs, we're featuring a Shakshouka Bagel recipe, perfect for breakfast, lunch and dinner by crowd favorite @sousisbagels, a brand that took Cairo by storm with her post-modern bagel flavors and homey social media content.

Ingredients:

Sousi’s Plain Bagel
-
2 Tablespoons Olive Oil
-
1 Red Bell Peppers
-
1 Medium Onion
-
2 Garlic Cloves (Chopped)
-
2 Teaspoons Paprika
-
½ Teaspoon Cumin
-
½ Teaspoon Coriander
-
¼ Teaspoon Chili Powder
-
½ Cup Tomato Sauce
-
2 Fresh Medium Tomatoes (Cut)
-
Eggs
-
Salt & Pepper to taste
-
Fresh Cilantro & Parsley for Garnish

​​Method:

Heat olive oil on medium heat in a pan.

Add the chopped bell pepper and onion, and cook for 5 mins or until the onion becomes translucent.

Add garlic and spices and cook for another minute.

Pour tomato sauce, and add some fresh tomatoes; mash the tomatoes into the sauce with a spoon or fork
-
Add salt and pepper to taste, cover and bring the sauce to a light simmer for 7-10 mins, uncover and cook a few more minutes to allow the mixture to thicken.

Slice plain bagel, and add butter or olive oil into the pan

Place the bagel halves facing down to crisp the interior, flip them over, and then add the tomato sauce

Place a stainless steel egg ring around both bagels, crack the egg in the hole (make sure not to crack egg yolks),
-
cook on low, cover the pan so eggs can cook evenly, or place in the oven.

Remove when egg whites are fully cooked and while egg yolks are half cooked, half runny.

Garnish with chopped cilantro and parsley before serving.​​
